THE STAFF

Stepping into Teatro Limón is stepping into Bruce Byng's house and he and his staff treat each person like family. It's OK to expect the personal touch at Teatro Limón. It would be foolish not to. The kitchen is in full view and every move of the chef almost looks choreographed. His kitchen is a stage. The diners are more than an audience, they are the actors, along with Bruce and his crew.

FROM THE VALLARTA 2008 FESTIVAL GOURMET INTERNATIONAL:

The eccentric Canadian chef-owner Bruce Byng has more tricks up his sleeve than a Las Vegas card shark – and he is always eager to share them.

Man, can this guy whip up a meal! And the neat thing is, you not only get to swoon over the result but witness how he did it, so you leave the place empowered to do yourself proud in the kitchen.

Prior to settling in Puerto Vallarta, Bruce trained in Toronto, San Francisco, Hong Kong and Lyon, creating epicurean magic at the Kingston Jamaica Hilton and the Havana Cuba Melia, as well as at Toronto’s prestigious King Edward and Windsor Arms hotels.
